1 Cup Packed Mint Leaves
1 Cup Sugar
1 Cup Water

Instructions

Remove mint leaves from stems.
Bring 1 cup of water to a boil.
Remove water from heat. Place leaves in water and cover pot with a tight fitting lid.
Steep for 20 minutes, or until water is room temperature.
Once mint water has cooled, strain water through sieve. Using a wooden spoon, press mint leaves to remove extra water.
Return mint water to pot and add sugar. Bring to a boil and simmer for 2 minutes until all sugar is dissolved.
Syrup can be stored in for over 2 weeks in the refrigerator.
