Spicy Barbecued Oysters

Ingredients

  • 24 large oysters
  • 2 teaspoons minced garlic
  • 1 tablespoon chopped fresh cilantro leaves
  • ½ cup lime juice
  • ¼ cup sugar
  • ¼ cup fish sauce
  • 1 teaspoon minced fresh chili

Instructions

  1. Put the garlic, cilantro, lime juice, sugar, fish sauce, and chili in a bowl then mix everything well. Let the marinade stand for 30 minutes or more to develop the flavors. Add more chili if you want it to be spicier.
  2. Turn on the grill to medium-high heat.
  3. Prepare the oysters, marinade, tongs, oyster knife, oven mitt, and cutting board beside the grill.
  4. Put the oysters on the grill with the flat side facing the rack. Close the grill then wait until the shells of the oysters open. Remove the oysters from the grill then put on the cutting board using the tongs.
  5. Remove the top shells using your knife and mitt then throw them away.
  6. Pour around one teaspoon marinade into each oyster. Put the oysters back on the grill then close the cover and grill for about two to four minutes or until you see the marinade bubble.
  7. Remove the oysters from the rack then serve with toothpicks or small forks
